Abstract 
개두릅의 일반성분 및 아미노산, 무기질, 지방산 함량과 항산화 효과에 대해서 조사하였다. 식품영양학적 접근에서의 개두릅의 일반성분은 건량기준으로 당질 41.42%, 조단백질 45.23%, 조지방 3.29% 및 조회분 10.07%이었고 개두릅 100 g의 함유 열량은 401.52 kcal로 분석되었으며, 총 식이섬 유소 함량은 건량기준으로 30.37%이었고 수용성 및 불용성 식이섬유소 함량은 각각 9.16%, 21.21%로 나타났다. 또한, 총 18종의 아미노산으로 구성되었으며 필수아미노산과 비필수아미노산 함량은 각각 10.51 g, 17.69 g이었고, 무기질 중 칼륨의 함유량이 가장 높았고 그 다음이 인, 칼슘, 마그네슘 순으로 나타나 알칼리성 재료임을 알 수 있었으며, 지방산 함량의 경우 총 포화지방산 1.56 g, 단일불포화지방산 0.11 g 및 다가불포화지방산 1.84 g로 구성되어 있었다. 개두릅 70% 에탄올, 헥산, 클로로포름, 에틸아세테이트, 부탄올과 물 추출물에서 DPPH 라디칼 소거능의 항산화 효과 결과 는 RC_50}값이 247.3, 120.7, 107.3, 105.7, 110.1, 491.9
mu}g으로 나타나, 에틸아세테이트 분획물에서 가장 높은 항산화 효과를 나타내었다.
The purpose of this study is to determine the possibility of using Kalopanax pictus leaf as natural health food source. The contents of proximate and antioxidative nutrients of Kalopanax pictus leaf were measured. The contents of carbohydrate, crude protein, crude lipid and ash were 41.42%, 45.23%, 3.29% and 10.07%, respectively. The calories of Kalopanax pictus leaf was 401.52 kcal/100 g and total dietary fiber was 30.37%. The percentages of water soluble dietary fiber to insoluble dietary fiber were 9.16% and 21.21%, respectively. The protein contained a total of 18 different kinds of amino acids. The contents of essential and non-essential amino acids were 10.51 g/100 g and 17.69 g/100 g. The K was the largest mineral followed by P, Ca, and Mg, which means Kalopanax pictus leaf is alkali material. The contents of saturated fatty acids, monounsaturated fatty acids and polyunsaturated fatty acids were 1.56 g/100 g, 0.11 g/100 g and 1.84 g/100 g, respectively. The antioxidant activity of 70% ethanol extract and fractions of the Kalopanax pictus leaf has been determined by the scavenging of the stable radical DPPH
the result showed that the ethyl acetate fraction was the most active, as the amount required for 50% reduction of DPPH after 30 mins (RC_50}) was 105.7

mu}g), hexane fraction (120.7
mu}g), chloroform (107.3
mu}g), butanol fraction (110.1
mu}g) and aqueous fraction (491.9
mu}g).
